Attack of the carb munchies!
Well, it is has hit me, and hit me hard. I’ve been really craving carbs and junk food lately. I am trying hard to be good, but from time to time I have found myself with more of a snack than I should have and more carbohydrates. I’m having a hard time not thinking about foods and all of the foods that I miss and wish I could still eat. I just can’t justify some things though, like Snickers bars or cheap taco restaurant take out. Chinese buffets just aren’t very fun anymore. Easy frozen tv dinners are a thing of the past. The funny thing is that I wont buy those things when I am shopping, as I always read the labels and quickly put them back. It’s when I’m at home and reading or watching tv that I really have strong desires for these foods. One can only eat so many eggs or cheese, celery or cauliflower.
I’m going to have to try harder to find something good for me to have when I get those cravings. Maybe something new that I can convince myself is good for those times that I want foods from the devil himself.
Maybe I should make a batch of peanut butter cookies. These are very low carb so eating even a few of them isn’t out of the question. If you want the recipe, here it is!
1 cup of natural peanut butter
1 egg
1/2 – 1 cup of sucralose granule sweetener
First mix the peanut butter and the sweetener together, and then mix in the eggs. Roll into small balls, make the cross marks on the top with a fork, slightly smashing the ball down, and then bake in the oven at 350 F until they start to brown around the edges. Remove from oven and allow to cool for a couple of minutes before carefully moving them to a cooling rack. These cookies are really tasty, but they do crumble easily since there is no flour in them.
