I Scream, You Scream, We All Scream For Ice Cream!

Ice cream is a favorite dessert that we figured was a thing of the past. The ice creams in the stores either have too much regular sugar, corn syrup or sugar alcohols for me to feel comfortable eating much of it.

Well, I am happy to say that our old friend is back! My daughter gave me the type of ice cream freezer that I mentioned in a previous blog post for Mother’s Day, and we have made ice cream twice so far. I look forward to giving this a try with a variety of ingredients! Here is the basic recipe I am using, and adding flavorings as we decide what to try next.

2 cups of half and half
2 cups of heavy cream
1 cup of Apriva sweetener (Use whatever sweetener you like)

That’s it! From there you can add whatever you like. The first time we added in a couple teaspoons of almond extract, and it was really great! The second time we decided that chocolate was the craving of the day. I was feeling a little lazy, so I took a shortcut. I used the No Sugar Added chocolate milk mix, mixed it into the cream and half and half, and then grated in some dark chocolate (85% cacao). Since the chocolate milk power is sweet already, I did not use the Apriva in the recipe. It was delicious! Next time I make chocolate I will melt some unsweetened Bakers chocolate and use that instead of the powder.

I also look forward to adding berries and other flavorings. We are so glad that we can enjoy ice cream again! Don’t forget though, just because you don’t use regular sugar, it does have a high fat content, so be sure to eat it in moderation! A couple of scoops makes for a good desert or snack, but more than that is too much for one serving. I always feel guilty after overindulging with any food, and it makes it tougher to lose the weight that I need to get rid of.

  • How about the Skinny Cow ice creams? I bought a box of their truffle ice cream bars – just 100 calories, 2.5 g fat, 19 carbs, 12 g sugar. I find if I cut out bread I can get away with a treat like this and still keep my morning glucose count between 90 and 110. These bars are a good size too – not skimpy! Now they’ve come out with 5.8 oz cups of their ice cream. A little higher in calories and some are a bit too high in sugar but I can get away with some of them. Diabetics today are pretty lucky compared to those of years ago. We have a lot out on the market that’s helpful and we have good meters to keep us informed.

      Hi Patricia! Yes, you are definitely right about being lucky that we have more choices and better meters to help keep us on top of things. Great morning numbers! Mine are a bit higher than that in the mornings still. Working on that though!

      I haven’t tried the Skinny Cow ice creams. For our dietary choices this is still too high in carbs and sugar alcohols. I am having good luck with homemade ice cream though, and the base recipe of just heavy cream, half and half, sweetener and then flavoring or other ingredients like fruit or nuts. The sweetener of choice for me is Apriva, which is Kroger brand of sucralose. I am getting ready to post a blog entry about strawberry ice cream that I made recently. The only carbs at all were from the strawberries. There is more fat than the Skinny Cow ice cream, but I have the belief that dietary fat is not bad for us. Everything in moderation though, so we don’t eat ice cream nearly as often as I would like, but probably still too often. I’m so weak sometimes!
